quick and easy granola

I made this with Camilla in mind. Usually when I make granola, she picks around the nuts, going for the oats. It's simple, crunchy and sweet. Perfect by the handful or as a topping for yogurt.

2 cups whole oats, not quick cooking
2 TB ground flax seeds
1 cup raw pecans, ground to a meal
1/4 cup maple syrup or brown rice syrup
1 tsp vanilla
2 TB olive oil
1/4 tsp salt

Mix everything together and lay on a parchment lined baking sheet. Bake at 350 for 10 minutes, take out of the oven and stir the mixture. Return to the oven for another 5-7 minutes until golden brown.
