big winter salad


This is a salad I have been having recently. These vegetables tossed with fruit and a dressing made from seeds create a vibrant, satisfying powerhouse meal, perfect for the colder weather.

1 cup chopped romaine
1/2 cup chopped red cabbage
1/4 cup chopped cauliflower
1 carrot, grated
1/2 of a celery stalk, sliced
1 radish, sliced
1/2 blood orange segments separated (or chopped apple)
1/4 cup chopped parsley
sunflower seeds for garnish

Chop all the veggies and place in a bowl with the orange slices and seeds. I think the pickled onions add a great tang, but green onions would work too.

for the dressing-
1/4 cup sunflower seeds plus a few for garnish
1 1/2 TB lemon juice
1/4 cup plus 1-2 TB water
1 small piece of garlic clove
1/2 tsp honey or agave
1/4 tsp salt
a few dashes of white pepper

Blend all the dressing ingredients in a blender until smooth. 
Drizzle the dressing over the salad. Toss and garnish with the sunflower seeds. This salad is pretty big, enough for two if you're having anything else with it, or enough for left overs.
