veggie salad with balsamic vinaigrette


This salad is full of vegetables that are complimented by the naturally tart & sweet balsamic vinaigrette. The brown rice and toasted almonds provide great texture components. Use a good balsamic for best results. And of course, the best olive oil you have.

1/4 tsp grated garlic
1 tsp minced fine red onion
1 TB balsamic vinegar
2 TB olive oil
1/4 tsp salt
1/2 tsp agave or honey



for the salad:
handful of greens
sliced cucumber
red pepper
carrot
sugar snap peas
avocado
cherry tomatoes
1/3 cup brown rice, cold or room temperature
2 TB toasted slivered almonds


Combine all the vinaigrette ingredients in a jar and shake until oil and vinegar have emulsified. You may have a bit dressing left over.
