peanut butter bites



This recipe is adapted from one I saw on line. These peanut butter cookies are perfect for when you want a little bite (or two) of something sweet. Super easy to put together; in fact, intended for a child to make.

1 cup peanut butter, creamy
1/4 cup white sugar
1/4 cup brown sugar
1/4 cup apple sauce
1 tsp vanilla
1/4 cup whole wheat pastry flour
2 TB quick oats
1 tsp baking soda
1/8 tsp salt (only if your peanut butter isn't salty)

In a bowl, mix the peanut butter, sugars, apple sauce, and vanilla together. Add the flour, oats and soda and stir until incorporated. Scoop out mini balls onto two parchment lined baking sheets and bake at 350 for about 8 minutes, just until they are turning golden. You don't want to overcook. Let cool before removing from the pans. makes about 30 cookies.
