beet & bean salad with basil vinaigrette
This salad was put together combining veggies I had on hand: greens, avocado, yellow beets, vidalia onion, garbanzo beans, cucumber, cherry tomatoes, and hearts of palm. This combo created a cool, tart, and creamy salad, and the basil vinaigrette added a note of sweetness.
2 TB fresh lemon juice
2 TB olive oil
1/4 cup chopped basil
1/4 tsp agave or honey
pinch of salt
Blend everything in a bullet, or mince the basil and combine well. You can add a tablespoon of water if you think it needs it.
