easy vegan french toast, aka carnival toast

I have made vegan french toast before but it has never turned out as good as these. I have followed recipes and they called for regular milk. This time I used creamer and stirred in baking powder.  I kinda think the creamer makes the coating more flavorful, and the baking powder creates a crispier crust. Brielle said these reminded her of funnel cake, which she meant as a good thing. You could leave out the vanilla, or add in cinnamon if you like. Personally, I wouldn't change a thing.

3/4 cup coconut creamer
1/4 cup all purpose flour
1/2 tsp good vanilla
1/2 tsp baking powder

sour dough or french bread
earth balance
maple syrup
confectioners sugar, optional

Whisk the creamer, flour, vanilla, and bp in a shallow bowl until the lumps are out. I used a pie pan. Heat the earth balance in a non stick skillet. Dip and coat each slice of bread in the milk mixture, drain off any excess and lay in the pan. Cook for about 3-5 minutes on medium low heat, watching that it doesn't burn, but not moving it around a whole lot. When the toast has browned, turn to cook the other side. Brielle likes hers with confectioners sugar and the syrup on the side.
