mustard tarragon vinaigrette

This mustard tarragon vinaigrette is my current favorite go to dressing. It goes beautifully with any vegetable, including radicchio, tomato, carrots.

Yesterday I put a salad together with what I had on hand: kale, cauliflower, yellow pepper, radish, avocado, olives, cucumber, and I topped it with a few toasted walnuts.

3 TB mustard
3 TB red wine vinegar
3 TB olive oil
2 TB water
1 tsp maple syrup
3/4 tsp minced tarragon
Whisk or shake everything together. This makes
enough for a few salads. And if you think you want to add more tarragon, I would taste it first; a little tarragon goes a long way. I haven't tried it yet but I have a feeling it would be really yummy over pasta, or a baked potato.
