Full Swing

The Asheville City Market on Saturdays is in full swing. The lettuces, asparagus, spring onions, spring garlic and radishes are just abundant. Strawberries are everywhere. I'm always amazed at what these farmers produce. All this lettuce made me in the mood for a Bibb salad with tofu dill dressing. It was very simple and tasty. The dill dressing was so creamy and good, and the black pepper was just the right zing. If you don't have spring garlic, you could just use spring onions and/or cured garlic.

Tofu Dill Dressing:

I block soft tofu
1/2 cup fresh dill
1 clove spring garlic
I stalk spring onion
Juice of one lemon
2 Tbs White Wine Vinegar
Salt and Pepper to taste
2 tbs water to thin (or more if needed)
Blend in Vitamix. Serve on salad, tacos, or dip for veggies.
