Mushrooms at the Market

 

This is Chris Parker of Asheville Fungi. I was so excited to find someone at the Wednesday Farmer's Market selling Fresh Exotic Mushrooms. I have never seen some of these varieties. Asheville Fungi is a local retail mycological supply store, and they sell exotic mushrooms. He offers Black Poplar, Lion's Mane, King Oysters and Red Reishi to name a few.  I bought Black Poplar and Lion's Mane.


I used the Black Poplar in a vegetable sautee for dinner.  I sauteed tofu, kale, mushrooms, grape tomatoes and zucchini. Topped with nutritional yeast. It was delicious! The mushroom flavor was different than anything I had ever had and really good.


I prepared the Lion's Mane the next day by sauteing it with a little bit of olive oil and garlic, salt and pepper. I served it as the main course with some veggies and rice. It tastes a bit like the sea--almost fishy. They are very dense as well and pull apart in strips--really interesting. I don't have a picture of that, but I will detail that next time. I think they will be great in tacos next time.
