white bean & quinoa burgers

I had some left over quinoa and decided to whip up some bean burgers for dinner. They turned out delicious; flavorful and balanced. The outside was crispy and the inside, almost creamy. Such an easy and satisfying supper.

1 can cannelini beans, rinsed and drained
1 cup cooked quinoa
2 TB quick cooking oats
2 TB minced parsley
1/2 cup panko bread crumbs
2 TB nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp salt
1 tsp soy sauce
1 tsp egg replacer that has been mixed with 2 TB water

Place the beans in a medium bowl and mash with the back of a spoon. Cannelini beans are really soft, so this is easy to do. Add the rest of the ingredients and mix well to combine. You can even use your hands. Let rest for a few minutes, and then form into patties, I got three good size burgers.  Cook in oil over medium high heat for about four minutes a side. Try not to flip them too much because, while they hold together well, they will crumble if messed around with too much.
I served with lettuce, tomato, onion, jalapeƱo, mustard and vegenaise. And we tried Alexia onion rings, which were pretty good, I was impressed.
