Vegan Caesar with Tempeh

I have been craving a caesar salad, and this salad turned out great! I sauteed tempeh and made homemade croutons. Here's how I did the dressing:

1/2 heaping cup raw cashews
Juice of 1 lemon
1 tsp apple cider vinegar
1 small clove garlic
1 tbs capers
Black Pepper to taste
Water to thin

Whirl up in Vitamix and toss salad.
