mung aur toor daal


I have wanted to make dal for a long time and when I found this website, Veganricha, I was inspired to give it a try. I didn't follow her recipe exactly; I simplified it a bit and I didn't use a pressure cooker. I love how simple it was to put together, and delicious.

1/2 cup yellow or red lentils, soaked for at least an hour
1/2 cup mung beans, soaked for at least an hour
1/2 cup chopped red onion
1 inch knob of ginger, chopped
5 cloves of garlic, chopped fine
1 cup chopped tomatoes (I had two whole tomatoes and a bit of tomato sauce)

1/2 tsp coriander
1/2 tsp mustard
1/2 tsp curry
1/2 tsp tumeric
3/4 tsp chili powder

1 bay leaf
1 tsp salt
cilantro and green onion
chili flakes, optional

Heat a couple of tablespoons of oil in a large pot, add the seasonings and cook on medium low for about 30 seconds, add the onion and cook for 1-2 minutes, add the ginger and cook for another minute. Add the tomatoes, garlic, drained lentils, 3 1/2 cups of water, the bay leaf, and salt. Bring to a boil, reduce the heat and simmer for 40 minutes.  Garnish with green onions and cilantro and chili flakes if you want to add more heat.
This makes enough for 3, maybe 4.
