kale and rice salad with coconut dressing


There's a restaurant in town which has a coconut dressing and I've always wanted to try and make some myself. It turned out deliciously creamy, with bites of ginger and garlic and a slight coconut-y background. It went really well with the vegetables I had and the left over rice.
1/4 cup coconut milk (the kind you'd make curry with)
1 tsp soy sauce
1 tsp sherry vinegar
1 TB neutral oil like safflower, or water
1/4 tsp grated ginger
1/4 tsp grated garlic
put everything in a jar
and shake to combine

here are the vegetables I had on hand:
couple handfuls of kale
1 yellow carrot
inch of red pepper
avocado
red onion
1/2 cup of cold brown rice
