easter, spring break, old friends, beach house and great food

We invited my oldest childhood friend and her husband to join us at our beach house for Easter and spring break. They live in Austin, Tx, and we don't get to see them very often. Karen and I have been friends since I was 3 and she was 5. She is family to me, and now her husband, Roy, is too. He is Italian and loves to cook authentic Italian cuisine. He brought his favorite canned tomatoes from Austin (I thought that was just so great)---apparently they are from a certain region in Italy and not easy to find. They are Carmelina San Marzano, and they really do have a rich and depthful flavor.  He decided to make his family recipe of spaghetti with margherita sauce---and it's VEGAN! While I'm not posting the recipe since I didn't cook, I did sneak a peek while he was cooking and noticed a couple things. He soaked the garlic in olive oil for an hour or so, then added to the pan with the tomatoes. A little sugar, fresh basil and salt and pepper, and it cooked for about a half an hour. The pasta was cooked perfectly, and the sauce was rich and fresh with lots of garlic. He added the pasta to the sauce, and it was done. So simple and so special. We ate out on the porch overlooking the ocean. We had delicious wine, crusty bread, and a wonderful night. Thanks so much for making the trip to visit, Karen and Roy.  We had a wonderful time and just love you guys! And Roy, thanks for cooking for us and sharing this delicious meal!
