Camilla baked a cake for her girl scout's troop because they're working on a 'cuisine's badge. She wouldn't let me help but I still hung out in the kitchen to keep her company, and decided I might as well be making something myself. So I started putting together this slaw for lunch. Turned out great for our veggie burgers. You could chop the cabbage, I know it's more work to grate it, but I think it's worth it.
3 cups grated carrot
2 cups grated cabbage
1 TB finely grated ginger
3/4 tsp chili powder
couple dashes of cayenne, optional
1/4 cup white wine vinegar
1/4 cup plus 2 TB vegenaise
1/2 tsp salt
1 small garlic clove, minced or grated on a microplane
Mix everything in a bowl and refrigerate until cold.
