Snow Day Brunch


We woke up to big snow flakes falling from the sky. It is the perfect Sunday for a brunch since we had slept in. I laugh a bit about this remembering my sister and I joking that we don't really like brunch, we like breakfast and lunch. But---it just seemed the thing to do today. I decided to make vegan huevos rancheros with pinto beans ( any bean you have handy would work). It really did hit the spot! The liquid smoke really gave it a nice flavor.

Par Boil a few small yukon potatoes
Sautee broccoli, kale, red onion, carrot, red pepper, jalapeno, garlic, fresh parsley (or any veggies you like)
Add the potatoes to the vegetables until slightly crispy
Scramble tofu until cooked and slightly crispy
Couple dashes liquid smoke
Salt and Pepper to taste
Dash Cayenne
Dash Cumin
Chopped Cilantro
Organic Corn Tortillas

Serve the tofu vegetable mixture on a warm corn tortilla and pinto beans on the side. Garnish with fresh jalapeno, cilantro, lime and avocado. Drizzle of hot sauce or salsa is another good addition.
