beets, a favorite way
I love beets. Beet soup, roasted beets, beets with orange, beet chips. And this is definitely one of my favorite says to eat them. Someone made this for me years ago and I have been making it ever since. It's especially nice in the summer, but I couldn't wait.
Wash and trim 3 beets. Reserve the leaves. Boil the beets in a pot of water for about 35 minutes, until they give in to a fork. Let them cool until they can be handled, then peel and grate. Add a smidge of garlic, grated on a microplane, a dash of salt, a bit of black pepper, about a tablespoon each of balsamic vinegar and a good olive oil. For the yellow beets, I chopped and steamed some of the leaves, and used them as a garnish of sorts. And I chopped a mint leaf for color over the red.
Of course this can be eaten now but it's really best after a time in the refrigerator.
