sloppy josaphines

This healthier version of the all american sloppy joe is a pretty popular dinner around here. I made them today for lunch, and served with a salad but really, chips is the way to go. It can be put together in 20 minutes, which was nice for today because I have so many other things to do!

1 package of tempeh
heaping 1/2 cup of ketchup (closer to 3/4)
2 TB apple cider vinegar
1/3 cup small diced onion
1/4 cup small diced carrot
1 TB brown sugar (packed)
2 large garlic cloves, minced
2 tsp soy sauce
1/2 tsp cumin
cayenne, to taste, optional
jarred jalapeno pepper slices

Cut the tempeh into small cubes and place in a steamer basket. Place the basket in a pot filled with a few inches of boiling water and steam for about 8 minutes.
In an iron skillet, sauté the onion, carrot, and, garlic in a bit of water, or olive oil, for about 2-3 minutes. Break up the tempeh a bit with your fingers, or the back of a spoon, and add it to the pan, along with the rest of the ingredients, except the jalapenos. Stir to get everything combined. Cook over medium low heat for about 5 minutes, and serve. (I put the jalapeno peppers on my sandwich because not everybody likes it spicy). makes 3 nice sandwiches.
