party salad

Over the holidays, I took this salad to a couple of parties, and since then, people have asked me for the recipe, so I thought I'd make it a post. It's a healthy concoction and, with the complexity of tastes and textures, very satisfying. A real treat for the eyes too! This recipe is per person, for a main course. You'd need less if it's a side dish.

big handful of kale, any variety will do.
small handful of each:
chopped broccoli
sliced red pepper
chopped and de-seeded cucumber
chopped celery
sprouts, or microgreens

1 carrot, grated
1 green onion, or a little red onion, chopped fine

few dried cranberries
few toasted pumpkin seeds

for the dressing:
1/4 c tahini
2 TB fresh lemon juice
3 TB water
1/2 tsp salt
1/4 tsp agave
small garlic clove, grated
Put all these ingredients into a jar and shake until blended. Toss all the vegetables with some of the dressing, you'll have left over. Garnish with cranberries and pumpkin seeds.
I have posted a tahini dressing before, this is similar, but simpler.
