Quinoa Pasta with Squash Sauce


I was tired and not really feeling inspired in regards to dinner last Monday, then I spotted the sweet little pumpkin in the veggie bowl and thought of a creamy pasta sauce. I have made it with Butternut Squash and wondered what it would be like with roasted pumpkin sauce. I had some quinoa pasta in the cabinet---suddenly I felt inspired! It was sooooo good and flavorful--not as sweet as  Butternut sauce--- just the right amount of savory.  Mike really loved it, and I know he did not miss the cheese.

Cut up the pumpkin and place on a cookie sheet. I did rub some olive oil on the squash, and I left all the seeds attached. It never hurts to extra fiber in the sauce.

Roast at 400 for 15-20 minutes according to your oven and location.  Once cool enough, peel and place in Vitamix along with:

1 shallot
1 clove garlic
1-1.5 cups Vegetable Broth or Stock--enough to make creamy but not watery
1Tbs lemon
1/2 Tsp cumin
1 Tbs Nutritional Yeast
Salt and Pepper to taste

Whirl up in Vitamix, then heat on low over stove. Serve over quinoa pasta with shallots to garnish.
