green styled quinoa salad



I started pulling some things out to make a salad and found a green theme emerging, so I just went with it.  The flavors came together really well: there's a brightness from the lemon, tang from the dill, two kinds of heat, and a bitterness from the parsley and peppers. Would be really nice with edamame I think but I didn't have time to shell...

the salad:
2 cups of cooked quinoa, cooled a bit
1/2 green bell pepper, chopped
1 stalk of celery, chopped
1/2 c chopped parsley
2 green onions, using part of the greens too, chopped fine
1/2 tsp minced jalopeno, partially deseeded

the dressing:
2 TB lemon juice
small clove of garlic, minced
1/2 tsp agave
dash of cayenne (or to taste, mine is really hot)
1/4 tsp salt, or to taste
heaping 1/4 tsp dill weed, or to taste

Served over greens, garnish with toasted pumpkin seeds, serves 2  (3 as a side)
