wheat berry, black bean & kale salad



Last night at the market I bought some beautiful dinosaur kale and thought I'd make a salad for lunch. This is super easy to make. Cooking the wheat berries was the most time consuming element and they were about done by the time everything was put together.

1 cup cooked wheat berries
1 cup black beans, rinsed and drained
2 packed cups chopped kale (stems removed)
1/2 cup grated carrots
avocado
sesame seeds
Cook the wheat berries, careful not to overcook, drain. Drain and rinse the beans and put into a bowl with the kale and carrots. Add the wheat berries when they've cooled a bit.

For the dressing:
1 TB mellow miso (I prefer the type made from chick peas but I suppose any would do)
1 TB red wine vinegar
2 tsp balsamic vinegar
2 cloves garlic chopped - you might want a little less, this was pretty garlicky
1 tsp chopped ginger
1/4 tsp salt
1/4 cup olive oil
1 tsp toasted sesame oil
I used my magic bullet to combine all these ingredients until smooth. You can whisk everything but it will just take a little longer to incorporate the miso. And you'd need to finely mince the garlic and ginger.
Pour the dressing over the salad and gently stir to combine. You might not need all of it. Garnish with chopped avocado and sesame seeds and fresh pepper. Next time I'd add a few toasted walnuts.
Would serve two, maybe three as a side dish.
