So many food blogs have recipes for granola and here's another one! I am pretty particular about how I like my granola. For instance, I don't like walnuts in it, they always get over toasted and leave a burned/bitter texture to the batch. I also don't like a lot of fruit. And I prefer it not too sweet. When I first started making it I loved the way big chunks would stick together and that it was super crunchy but each time I made it I kept cutting back on the sugar and the time in the oven and now really prefer it that way.
5 cups oats
1/4 c olive oil
1/2 c brown sugar
1/4 c agave, or maple syrup
1 tsp vanilla
1/2 tsp salt
1 tsp cinnamon
1 1/2-2 c raw almonds, roughly chopped
1 1/2- 2 c raw cashews, roughly chopped
1 cup coconut unsweetened flakes
1/4 c flax seeds, ground
1 T raw sesame seeds
1/2 c dried cherries or cranberries
Set your oven to 325. Measure everything into a bowl except the coconut and cherries. Stir everything together and then add the coconut and stir to incorporate. Spread onto a parchment lined baking sheet and bake for about 7 minutes, take out of the oven, stir, rotate the tray and bake for another 5-8 minutes until lightly golden. For me this is plenty toasted but I you can bake it longer if you like. When it's out of the oven, add in the cherries. Let cool before storing. This makes one big tray, close to a gallon sized container.
For breakfast, I love this with soy milk, B and Brett like theirs plain and C is eats a version (without the nuts) in yogurt.
