kale salad with mustard shallot vinaigrette

Today for lunch I finished off this beautiful kale that my friend Josh gave me. I have been into this shallot vinaigrette and its strong flavors work great with kale.
You could mix in anything you like, I had left over asparagus and lima beans, some raw broccoli and shredded carrots.

Into a little mason jar:
1 TB packed minced shallot
2 tsp dijon style mustard
2 TB white wine vinegar
1/4 tsp agave
3 TB plus 1 tsp good olive oil
1/4 tsp salt
pepper to taste

and shake until emulsified.

I make great efforts to not buy foods with preservatives.  This is  an exception. I wish someone could recommend a better mustard, but thus far, I haven't found it!
