apple & oat muffins

I haven't made muffins in awhile and it seemed like a good thing for an afternoon snack for after school. These are pretty sweet, you could decrease the sugar but I probably wouldn't.

1 TB egg replacer
4 TB water
1/2 c unsweetened applesauce
1 cup sugar
1/3 cup vegetable oil
1 t vanilla
3/4 cup peeled and grated apple
1 1/3 c flour
1/2 ts salt
1 ts baking powder
1 ts cinnamon
1/3 cup oats

Whisk the egg replacer and water for a couple minutes until frothy, add the applesauce, sugar, oil, vanilla and whisk together. Stir in the grated apple. Sift into the wet ingredients the flour, salt, bp, cinnamon, add the oats and stir until just combined. Scoop into a lined muffin pan and bake at 350 for 20-25 minutes.
I got 9 muffins.
