pancakes for the girls

This is a really easy pancake recipe. Aside from being so much better tasting than what you can buy, and cheaper, I love knowing that there are only a few ingredients in them.  It makes great waffles too.      

1 c flour, white or wheat/white combo
2 T sugar
1/2 t salt
2 tsp baking powder
1 TB egg replacer

2 TB earth balance butter
1 c almond milk (or whatever you like)

Melt 2 T earth balance in a glass container in the microwave. Pour in the almond milk and mix together. Measure the dry ingredients into a sieve, which has been laid across the milk and butter mixture.  Press through with a spoon,  mix together and let the batter stand for about 3-5 minutes.

Cook on a lightly sprayed griddle or in your waffle maker. Makes about 8 good size pancakes.

 *I make a big batch of all the dry ingredients, except the egg replacer, and store in a container.  That just makes the morning pancake making easier.  I use a heaping cup full of the flour mixture then add the egg replacer and sift into the milk. If the mixture seems too thin, add a bit more of the flour mixture. If it's a bit thick, add a little more milk, it's a really forgiving recipe.
