black bean burgers

A good bean burger is a real treat for me.  I love it with vegenaise, dijon mustard, lettuce, tomato, maybe some sprouts. This one is made with black beans and Brielle loved it.

1 can of black beans, drained and rinsed
2 garlic cloves, minced or grated
1/3 c bread crumbs
1 cup brown rice
1/2 c grated carrot (a small carrot)
3 green onions, white parts
1 T tahini
2 t tomato paste
2 t egg replacer
1/2 t cumin
1/2 t chili powder
1/4 t paprika
1 t salt
pepper to taste
(I'd probably add a couple dashes of cayenne but Brielle doesn't like spice)

Put the beans in a bowl and mash, not into a paste, just until most of the beans have been broken. Add everything else and mix really well. This is easiest to do with your hands. Form into patties and cook over medium heat until dark golden brown. Probably makes 3 large or 4 smaller servings.

We had left overs because Brett and C had hamburgers. The mixture can be kept a couple of days in the fridge. I think they are better cooked when you're ready to eat them, rather than cooked and then reheated. So for the second round, I served the burger with a green salad tossed in a mustard vinaigrette, and a side of roasted vegetables.
