I am just really excited! I made really crispy, vegan pizza crust! I know it seems so simple and silly, but I have always had much resistance to baking---just not one of my strengths or so I thought. So, after buying varying crusts at the store and local farmers market and not really liking them,  I decided to face my fears and try making my own. I researched a few recipes and picked the simplest one I could find---thought there would be less resistance that way. The first batch was not good---a big, dry ball of dough. Turns out, it made a great batch of doggie treats for my sweet pup, Mela. So, I went on to another recipe, and it was PERFECT! It was crispy, flavorful and most of all---I MADE IT! The homemade kale pesto on there wasn't bad either---but that's for another day. A little soy cheese, mushrooms, onions, bell pepper and homemade tomato sauce. YUM

1 1/2 cups all purpose flour 
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons olive oil
1/2 cup water
Note: I did use 1/2 cup spelt flour and 1 cup all purpose. I also added 2 tablespoons of flax meal.

Knead for a minute or so and roll out. It was really thin---just the way we like it! Bake at 450 for 10 min or so.
